We have been working with WooCommerce, WordPress since 2011 so have vast knowledge in this domain. we have done some serious customization/plugin on WooCommerce, for example: 
A product customizer from scratch.
Custom gallery for variations.
Displaying product variations as a separate product in the store.
Zip Code based shipping and discounts.
Sorting products based on their color value etc.

We maintain the projects with versioning tools GIT and being the tech lead, I observe the approach and coding practices being used by the team. We also share the PMS access with the client so that issues threads and deliverables can be managed and updated.
